Uttapam on Bread

Uttapam or Uttapam Recipe

Bhavna again this side. Well, I am sure you must be getting all the non-veg recipes from Raj but It is me who gets in kitchen to cook something new and different with veggies.

Today is a simple Uttapam Recipe but with a twist and presented in a wonderful way which will make your kids and guests eat this famous south Indian dish with much desire.

Look at this pic and see how a boring dish (as per my Raj) can be turned into a super rockstar (as per Raj again).

Raj was home little late and as usual said that he is hungry. So he wanted something to eat with tea. Now, there are times like these when I start thinking on making something nice for him. And then came the idea of making Uttapam on Bread.

Now, Lets get down to the recipe. Most of you know how to make Uttapam but still I would share the recipe for that too:

  1. Suji
  2. Chopped Onions
  3. Chopped Capsicum
  4. Chopped Tomatoes
  5. Little Cream.
  6. Salt and Pepper
  7. Chopped Green chillies.
  8. Chopped Coriander (optional)
  9. Bread slices
  10. Some water

French Onion Soup

Bhavna here!

Today I am going to share a very famous soup which is called French Onion Soup. And though traditionally this soup is made in beef stock or may be chicken stock, I made it completely vegetarian. Not because I don't eat non-vegetarian but because I did not have stock. I will also tell you how this can be made with chicken stock. French Onion soup is usually made with caramelized onions but I have tried a different variation here!

It was actually quick thinking on my feet as Raj was not feeling well and he wanted something hot to sip on. Also, my kids love soup. So, I looked into kitchen and thought of making this wonderful soup.

As per Raj who is very picky about the food he eats, it tasted yummmmm. So I was glad to hear that! Even the kids lapped it up!!!

So, here is the recipe for French Onion Soup:

  1. 1 bowl finely chopped onions
  2. 2-3 big garlic cloves chopped
  3. 1 tsp butter
  4. 2 tablespoon grated cheese
  5. 1/2 cup milk
  6. 4 cups water. Now if you have stock, use stock instead of water. The flavor would be even more. But that's not to say this one is any less. ;-)

Butter Garlic Prawns

Butter Garlic Prawns is one of the simplest and fastest recipes I have made which has amazing flavor and natural wonderful aroma of Prawns when they are cooked.

One thing that I have always loved but seldom get to eat is Prawns. My mother-in-law stays in Orissa and cooks amazing Prawn curry. But if you know me well, I am not really curry person. So, today I bought prawns, as I am in Delhi, and thought, OK, let me try Butter Garlic Prawns.

I had the best prawns of my life in a restaurant in Puducherry (formerly Pondicherry). They were Golden Fried Prawns and I was totally bowled over by them. I never had those kinda prawns ever again.

So, with Butter Garlic Prawns or Shrimps, I did not even try to match it. Anyway, its a different recipe but It came out good, in fact too good. The wonderful warm taste of garlic and the natural taste and bite of prawns make it super delicious and the butter makes it so much glossy and juicy. It's a perfect sea food snack to be had with amazingly chilled beer in afternoon. Oh my, I am thinking of Goa here!

Let me take you through the recipe now:


  1. 10-12 small Prawns: de-shelled and de-veined. This is very important. If you do not know how to do it, ask the person at the shop to do it. You can also buy packed prawns/shrimps which are already de-shelled and de-veined.
  2. Butter - 1 tablespoon.
  3. Finely chopped garlic.
  4. Salt and black pepper.
  5. Half a lemon juice.
  6. Coriander for garnishing.

Desi Tortilla Wrap

Hi Friends,

One of the rare days when I wanted to cook something veggie and for my kids which is delicious and not spicy, I could think of fusion. While coming back from office thinking what could I make, the spark in my head told me to do a twist to spicy Tortilla Wrap recipe. You can even make this for kids' lunch box.

Tortilla Wraps basically come from Mexico and are known to be spicy as most Mexican food is. But this time what I will share with you is a nutritious and yummy recipe which not only tastes good but looks good and give something new to your kids. You will find that the recipe so much resembles Indian way of cooking.

The magic is in the stuffing which is suited to kids' taste buds but obviously you can modify to your liking, by this I mean spicy!

Here is the Desi Tortilla Wrap recipe:

  1. Tortilla Wraps. You can get it from any grocery store.
  2. Rajma or Kidney Beans. Boiled nicely.
  3. Chopped Onions
  4. Roughly Chopped Tomatoes. We want them in the bite so don't chop them finely.
  5. Paneer cut in small cubes.
  6. Spinach - blanched.
  7. Salt and Pepper.
  8. Dried Mixed herbs
  9. Dhaniya power and Garam Masala.
  10. Mayonnaise

Somehow, I love most thing British! Though I have never been to England but from whatever I know of England, be it the culture, food, living habits, weather, accent, I think that is the only place I would like to settle outside India if I get the chance to.

Food is one of the main reasons I like it and I do follow few British chefs. Fish and Chips was one of the earlier english classics that I picked up which I got hooked onto. And today, I will share with you the recipe of this classic dish.

I actually added another side to it by adding yummy mushy peas which adds another bit of nutrition in the dish.

Recipe for Beer Battered Fish and Chips with Mushy Peas:

  1. Fish Fillets. I sued Singhara or Cat Fish.
  2. Flour (Maida)
  3. Chilled beer. Well, this one is not to drink but to be added in batter. :P
  4. Salt and Pepper
  5. Oil to deep fry
  6. Packed French Fries.
  7. Green peas, boiled.
  8. Butter.

Baked Cheesy Rolls - Healthy Snacking

When it comes to kids, you know for sure that if you add cheese they will love it. My kid's love cheese and they even demand cheese crust pizza in their favorite outlet.

So, I was thinking of some new way to give them a snack which not only they loved, but even me and my wife could it. So I had to make it healthy. Well you say cheese and healthy? Well, not really but I baked these snacks instead of deep frying. Now that makes it healthier, doesn't it?

These are just like deep fried as they outer crust is super crispy. You will love these Baked Cheesy Rolls.

As you walk bye the lanes of Old Delhi, the smokey fragrance and aroma in the air of tikkas and kebabs will pull you so strongly that you will not leave without having a bite. That's actually true today in almost every part of Delhi with those vendors serving hot smokey Chiken Malai Tikka or Chicken Tikka.

When winters set in, I took our my barbeque, set the coal on fire and started sipping my scotch while I was smoking and charring those Chicken Malai Tikkas. I did it 4 consecutive weekends treating family and friends and it was so good to see them coming up to the barbeque and eating them piping hot. They just could not wait for it to be served. This thing comes out so juicy and succulent and the smokey flavor will take your breath away. Even the process will have your drooling as those juices will fall on hot coal and that sweet sizzling sound will enchant you.

Though this Chicken Malai Tikka recipe requires specialy equipment like a barbeque like Weber and seekhs. But you can have one locally made by local lohars. The seekhs that I used, I got them from a local lohar and it made my work so easy. However, the actual recipe is super easy. Alternatively, you can also cook it in oven if you don''t have BBQ. Though, you will never have that smokey flavor.

Pan Fried Chicken Thigh with Garlic Mashed Potatoes and Chips

Hi Friends,

Now that summers will be here and infact afternoons are much warmer, the time is coming back for Beer binging!!! Isn't it? LOL.

But yeah, if you also have some awesome food to go with it which is not just a snack but also a wholesome meal, there could be nothing better! But what you really want is something easy and light. I usually make something like this usually when I want to have a non-Indian meal which is not spicy but just simply flavourful and typically English!

So, it is simply a chicken thigh first pan friend and then cooked a bit in oven served with silky smooth mashed potatoes and Lays chips which can be substituted with fries.

Ahhhhhhhhhhhhhh..... My blog is called Chicken Shicken and I am posting a vegetarian dish? How come?
Well, people who don't eat non-veg, for them paneer is substitute of chicken, ain't it? LOL! Actually, I decided to do this post as I was getting many requests from friends to post something veg. So here it is!!!

First of all, this is a super easy and tasty snack which comes under Chinese cuisine. It's called salt and pepper because the only spices you use are salt and pepper. And it is healthy!

Here is how Paneer Salt and Pepper looks:

  1. Paneer (Cottage Cheese) cut into rectangular size cubes. Ensure you get fresh paneer as its soft and not hard.

  3. Corn Flour enough to coat Paneer cubes.
  4. Chopped onions, chopped Spring Onions.
  5. Oil

Well, when I started cooking, I tried my hand at the cliche dishes which were loved by all and trust me Seekh Kebabs were the favourites. The ones I tried were so easy to make that I was surprised and shocked but yet they were delicious and you did not need the Barbeque or Tandoor or Oven to make them.

  1. Chicken Mince with Fat, preferably in 80:20 ratio. This helps in tender kebabs.
  2. Chopped Onions
  3. Salt, Pepper, Garam Masala, Dhaniya powder
  4. Chopped green chillies
  5. Woodern Skewers soaked in water for 10-15 minutes.
  6. Oil

At times all you want to do is do a 'roast' like AIB. LOL. No, at home you can only roast your chicken and not Ranbir or Arjun. But the thing is, you can eat your chicken the way you want.

Now this was one night when few people had come for dinner and my microwave ditched me by going kaput at the last moment when I was about to roast my chicken. I had it all ready, marinated whole chicken ready to go under the heat.

And then I improvised and how!!! As they, when the going gets tough, the tough gets going.

Barbeque Chicken Legs - The Juicy and Tender Treat

Its been a while I have written a new post but here I am. Have been quite busy with my nephews and nieces visiting and weekends have been busy. Though I tried something new last week and now sharing it with you.

I have been making those curry dishes now for a while and wanted to try out some snacks that you could have with your pint of beer (it's so hot as you know), so I decided to try out my favorite barbeque kind of thing. Well, I have done tandoori chicken earlier but this time it had to be something American style. Yeah, the Barbeque Chicken Legs which actually turned out to be as beautiful as delicious they were.

To be honest, it is such a simple recipe that anyone can make it but don't take its execution for granted because you would have to use 2 modes in our Microwave (you need to have Convection and Grill modes for this recipe) or if you have a charcoal grill (I am so much desperate to buy it this winter), nothing better.

I have eaten this dish many times when I have gone out and really love the mild sweet taste it gives even though I have a spicy tooth!!! And this dish is not spicy so even kids would enjoy it.

So let me start:-


  1. Chicken Legs (10 pcs)
  2. Mixed Herbs
  3. Salt
  4. Barbeque Sauce - This is what makes it sweet and gives that color and coating!
  5. Olive Oil/Vegetable Oil to coat the chicken legs (depending upon availability. I used already used oil and it came out good)

Well, I love the dry form of chicken as much as I love curries. But I cook this dish mostly because my wife love chicken and more so in dry form than in curry. Best part is, it’s very simple. And then there are 2 ways to cook it, either in pan or in oven.  I prefer the pan version because it’s not entirely dry but with some ‘gravy-ish’ masala, you know the juices of chicken with all spices that you use in marinade will be there.

So here we go, recipe for “Ajwaini Murg’:-


  1. 6-8 chicken drumsticks
  2. Ajwain
  3. Ginger Garlic Paste
  4. Salt
  5. Kasuri Methi (Dry)
  6. Garam Masala
  7. Curd (beaten smooth)
  8. Kashmiri red chilli powder

Tandoori Chicken

Tandoori Chicken or Tandoori Chicken Recipe

So, many of my friends have asked me the recipe of Tandoori Chicken and how to get that 'Grilled Look', you know to make it look like its not home-made!

Well, to all my food maniacs, here is the recipe!

Preparation Time: 4-6 Hours

Cooking time: 45 minutes


First and Foremost, you will need the strong desire of a juicy outcome!

  1. 1 Whole chicken (about 800 gms)
  2. Salt
  3. Red Chilli Powder (preferably Kashmiri chili powder as it adds less spice and more color)
  4. Garam Masala
  5. Ginger-Garlic Paste
  6. Hung Yogurt (Hang curd in a muslin cloth for 2 hours to drain out the water. It will give you a dough like yogurt)
  7. Black Pepper powder
  8. Lemon Juice
  9. Mustard Oil. This is typical to Tandoori chicken.
