How to Make Perfect Hummus

Hummus or Hummus Recipe


Yesterday, I posted recipe for Pita Bread which came out awesome and is almost eaten in every meal in middle east. And I also talked about Hummus. so I could not really hold myself till Saturday and I called my mom in morning to soak the chickpeas so that I could make this wonderful healthy and delicious middle eastern dish on Thursday night itself.

Hummus is a traditional middle eastern dish and is actually eaten as a dip with fresh Pita Bread and is actually a snack. In Arabic, Hummus literally means ChickPeas. Today, what I am sharing is Hummus with TahiniTahini is an integral part of Hummus and cannot be substituted. It is actually white Sesame seeds paste. You can exclude it if you want.

Hummus is high in Iron and Vitamin C and also has significant amounts of folate and Vitamin B6. The chickpeas are a good source of protein and dietary fiber; the tahini consists mostly of sesame seeds, which are an excellent source of the amino acid methionine, complementing the proteins in the chickpeas. Depending on the recipe, hummus carries varying amounts of monounsaturated fat. Hummus is useful in vegetarian and vegan diets; like other combinations of grains and pulses, it serves as a complete protein when eaten with bread.

There can be more variations for Hummus but today it is the basic traditional Hummus that you will get.

Recipe:
Ingredients:

  1. 2 cups Chikpeas soaked overnight. Well boiled.
  2. Liquid left from boiled chickpeas. Around 1/2 cup.
  3. Crushed Garlic
  4. 1 and 1/2 tablespoon of White Sesame seeds. Soaked in water for few hours. Now, you may even dry roast sesame seeds and add into Hummus if you do not like the raw taste.
  5. Salt to taste.
  6. Lemon Juice.
  7. Coriander for garnishing.
  8. 4 Table spoons Olive Oil

Pita Bread

Pita Bread or Pita Bread Recipe


Pita Bread is a soft, pocketed bread consumed mainly in Mediterranean and Middle Eastern cuisine. It resembles naan or even a pizza base but it has pockets. The pale color even reminds me of the wonderful khamiri tandoori roti at Karim's in Jama Masjid in Delhi.

I am a big fan of non-veg food especially cuisines from land of Muslims or Arabs.

Pita bread is generally cooked at high temperature. Traditionally, it cooked at very high temperature in big ovens and temperatures can reach 400-500 degrees C which is hard to replicate in your homely oven. The high temperature causes this bread to rise up dramatically and that leaves a nice pocket in it. So, when you remove it from oven, you can cut it in half and use the pockets to fill with stuffing of your liking.

Sometimes, Pita will not puff and not have pockets. It is called "Pocket-less Pita". Then you can eat it with Hummus dip which is another popular dish in middle east.

Making Pita Bread is really simple. Nothing complex as you will see. I have given it my own twist by adding one of my favorite spice. I added a little extra salt so that I could eat it without anything else.

Recipe:

Ingredients:

  1. Refined Flour. 1 cup. This is enough for 2 medium size pita breads.
  2. Dry Yeast. 1/4th of pack.
  3. Warm water. Not hot.
  4. Salt as per taste.
  5. 1 teaspoon sugar
  6. Ajwain or Carom Seeds. This is my twist.

Yesterday I posted a rich, creamy, silky and calorie laden Safedposh Chicken. To offset it, here is the healthy and yet delicious "Grilled Chicken Salad" for the calorie conscious!!
As you take the bite, the crunchy lettuce and glorious taste of homemade vinegar and lemon dressing greets your taste buds along with the juicy and tender Grilled chicken chunks! If you had salad in Subway, you are about to forget it now!!!
It has all the healthy elements like vitamins, fibre and protein!!

Recipe as follows:

Ingredients:
  1. Whole Chicken Breast.
  2. Sliced tomatoes
  3. Roughly chopped Lettuce Leaves.
  4. Sliced Olives. You can get them from the market.
  5. Slices Cucumbers.
  6. Sliced Onions, if you prefer.
  7. 2-3 table spoons of vinegar and half the amount of lime juice.
  8. Mayonnaise
  9. Salt and Pepper.
  10. Mixed Herbs and Rosemary.
