Coconut Ladoo Recipe

Dear Readers,

Today the recipe that I am going to share is not mine but my Mom's recipe. Though she is more famous for her soft and stuffy paranthas in my family but this time she tried something new, the Coconut ladoo.

Since we moved to Bangalore, my mom has made few friends who are south Indians and she has been learning few things. And coconut is available in abundance here. My kids love sweets and she made is especially for them.

I used to think making desserts or sweets is really difficult and complex but more I have seen my wife make those wonderful desserts like Bread and Egg Pudding, Tutti Fruity Cake and Mocha Mousse, I now know how easy are these. Do check out these recipes too by clicking on the name.

So, here is the simple recipe for mouth watering Nariyal Ladoos.

Perfect and easy home made sweet ready for festivities

Prep time:
Cook time:
Total time:
Yield: Serves 4

Ingredients:
1 finely grated Coconut
Few thinly sliced Almonds
300 grams Sugar

Method:
  1. First of all, mix the grated coconut, sugar and almonds in a bowl and keep it for 1 hour.
  2. Now take a wok or kadhai and heat it on medium.
  3. Add the mixture and roast it for 25-30 minutes stirring in between.
  4. Once it starts to stick a little, take it off the heat and let it cool down.
  5. Once cool, wet your hands with water and start making round balls or as we call the ladoos.
Your Coconut or Nariyal Ladoos are ready. Store it in airtight jar and enjoy one ladoo at a time. Just saying because it is sweet.

Omelette stuffed with Salami

Eggs and me, inseparable! I just cannot get enough of eggs. It is must have in my breakfast. Whenever my mom asks me what I want to have for breakfast, invariably I will say "Omelette and Parantha". It just fills my heart with gladness! Oh la la, I just cannot stop talking about eggs.

Now, at times I do not plan what I want to cook. I will see what is in the fridge and then make something out of it. And today morning exactly this happened. My wife loves English breakfast, she is not the type of woman who loves stuffed paranthas like yours truly does. And I am a typical punjabi lad, I love my paranthas and butter. 

I saw some chicken salami and eggs in the fridge and thought of trying something different. And so I thought, why not stuff my Omelette with salami. Also, look at Shakshuka which is another fantastic breakfast.

Here is the the simple Omelette turned into a more delicious form.

Omelette stuffed with Chicken Salami or Ham.Perfect Sunday breakfast in a new unique way. Full of protein and nutrients.

Prep time:

Serves: 1

Ingredients:
2 Eggs
5 nos. Chicken Salami or Ham
Little Oil
Salt to taste
Black Pepper

Method:
  1. Now first of all, break your eggs in a bowl.
  2. Add salt and pepper and beat the eggs. Simple, nothing fancy.
  3. Now the fancy stuff. Stack the salamis on top of each other.
  4. Take a very small steel bowl. The size should be equivalent to what size of salami you want in your Omelette.
  5. Press it hard on the salami stack upside down and cut through.
  6. Voila, you will have perfectly round shape salamis for your Omelette.
  7. You can either heat up the salami in microwave for 1 minute or put in Omelette just like that.
  8. Now heat the tawa or flat pan. Add some oil.
  9. Pour the beaten egg and spread it across.
  10. Place salamis on the omelette like you see in above picture.
  11. Fold it and cook through.
  12. Serve it with the outer part of salami. Why to waste it?

Steam Lemony Corn

Hi Guys,

After another long disappearing act, I am back. Bangalore has been keeping me busy with hardly anytime on weekends.

However, I am back with the bang as you can see that your favorite blog has a new look and much easier on the eye. And I promise you, recipes will keep on coming.

Just yesterday my wife went for veggie shopping and got a couple of corns from market. My kids love corn and so do I. But we miss the soft 'bhutta' that they sell in Delhi which is done in sand. It is oh so yummy and juicy. And I thought I might as well try something new. Not in sand though. :-)

This is what I ended up with and I have to admit, it just came out awesome, at least if I believe my wife and kids.

Thing is corn is super healthy and full of nutrition. If you have it this way, it just adds the flavour to the health.

Let me take you through simple recipe of this juicy and yummy corn:

Ingredients:


  1. 2 sweet corns.
  2. Lemon slice.
  3. Chopped coriander.
  4. Butter.

Method:
  1. First of all, steam the corn. Either in Microwave or in a pot. It will take only 10 minutes.
  2. Once it is steamed, take it out and let it rest.
  3. Heat the pan on medium heat.
  4. Add butter and just add corn. Don't wait for butter to melt.
  5. Saute it for 2 minutes.
  6. Add little salt as per taste.
  7. Squeeze lemon over it and give it a stirr.
  8. Garnish with chopped coriander.
Voila! it is done. This super easy corn is ready for you. Kids love it. You can find few more kids recipes on this link.

Litpit Kaleji (Chicken Liver)

Hi People,

It seems like I have been gone for eternity and I know it is true that I have not been posting for a long time. That is because I have not been cooking. Have shifted to Bengaluru and I have been staying on office accomodation for months but now my playground (kitchen) is all set and I have already started.

So, here is my first post from the new kitchen, but one of many to come from Chicken Shicken.

Last Saturday, I went into the chicken shop and got one whole chicken to make Pot Roast Chicken which you can see on my blog but then I also picked up some chicken liver, kaleji as we fondly call it in north. :P  And why do I call it Litpit? Well, because neither it is dry nor it has gravy. All the masala is covering the liver.

And like it happens, I mostly cook very impromptu dishes which are easy to make and delicious too. This Litpit Kaleji is one of them. Perfect to go with drinks (Now that is what I love doing on weekends). I never knew that such a simple 15 minutes thing could be so easy and simple.

Egg Frittata

Hi Bhukkads,

How are you?

Weekend and time for that innovative and amazing breakfast, isn't it? Well that is exactly what I had today on this Lazy Sunday Morning. Two things I did, made this amazing breakfast and dusting of the house. Well, that is my way of helping my wife at home on weekends. Trust me, I do both things with passion as I like my food good and my house without a spec of dust.

Anyway, enough bragging and lets get to drooling. I have always though of baking eggs a fantastic way to have eggs. Egg Frittata was one thing that I wanted to make as I love eggs. Give me eggs anytime, in any form, I will be happy! It is also a more nutritious form as you can add as many veggies that you want. I had only peas and onions in the house and made do with them but you can add anything that you want. Carrots, capsicum, mushroom, anything you love! Well, if I had planned it well, I could have added salami and sausages too! Hell yeah! Though Frittata in Italian translates to "fried" but I baked them totally except the veggies that I sauteed beforehand.

When is comes to sweets and desserts, there are only two things I look forward to. The sweets with less sweet or any dessert made by my wife Bhavna. If you have seen the Tutti Frutti Cake she made which is on my blog, you will know how good she is with all things sweet.

On the same day she made that cake which she baked in afternoon, she made this even more awesome Bread and Egg Pudding for dinner. I have had puddings before, I have had good ones, but the flavor and taste was so awesome that I am still craving for it again. I must say, totally out of this world thing.

It doesn't look fancy, but let me tell you it looks delicious for sure.

All these are totally to die for.

Chicken Lollipop

Chicken Lollipop Recipe or How to make Chicken Lolliop

Hi Friends,

Today I am going to share an idea that will not only please your kids but also everyone else fond of kebabs, and It is my version of Chicken Lollipop.

So, it so happened that my kids were being stubborn on the fact that they wanted to have lollipop. They are my sons who are twins and when they want something, they want it. Period. And I had just got chicken mince or keema and was wondering what to do with it. And then suddenly this idea kicked into my head. What if I could just given them chicken kebabs or little patties on wooden skewers. And Bingo, I got on with it and they had their Lollipop.

They were so amused and happy that they finally got their lollipop. I found it great way to give this snack for kiddos and yet not feel bad about that they are eating junk. As a parent, it is very satisfying and also a great snack in your parties. It is almost like the Chicken Seekh Kebabs recipe that is there on my blog, but slightly different. I did not put any chillies in there because it was for kids.

Here is how you can make it.

  1. Chicken Mince 250 gms.
  2. Salt to taste.
  3. 1/2 tablespoon Garam Masala
  4. 1/2 tablespoon Dhaniya powder
  5. Chopped Onions.
  6. 2 tablespoons oil.

Keema Tart

An Innovative snack with goodness of Keema! Keema Tart

Ever wondered how many times you end up serving same kinda snacks to your guests? Well, I realized that actually few days ago when this thought was going in my mind. And suddenly this idea popped into my head to do something with the tarts as my sisters gifted me little Tart moulds I wanted.

Initially you won't believe that I was thinking of doing Strawberry Tart as I really want to try desserts as well just like my wife does. But then, I realized we did not get strawberries in anywhere locally. But the moment I saw Keema in the meat shop while buying mutton for my Rogan Josh recipe which I posted earlier, it rang a bell and I decided to this Keema in Tart, make a new snack. I have actually done a similar thing on Holi, served Dahi Bhalla in a new way. Check this Dahi Bhalla Katori as well.

So, here is what I actually came out with.

I have used Keema, you may use anything, just run your imagination.

Let me take you through the recipe now.

Recipe

Ingredients:

For 3 bowl size Tarts:

  1. 1 cup Refined Flour or Maida
  2. 200 grams butter
  3. 1 teaspoon of Salt
  4. Chilled water. Keep water in a bowl with ice cubes in it.
For Keema:
  1. Keema as required. If some keema is leftover, you can eat with chapati or something as well.
  2. Finely chopped onions.
  3. Finely chopped Green Chillies as per preference.
  4. 1 tablespoon oil.
  5. Salt
  6. Garam Masala
  7. Degi Mirch or Kashmiri Red Chilli Powder.
  8. Chopped tomatoes.
  9. Chopped Coriander.

Method:
For Tarts:
  1. Mix flour and salt in a bowl.
  2. Add butter in small pieces so that mixing is easy.
  3. Now mix butter and flour nicely with hand till it starts coming together.
  4. Add one tablespoon of chilled water at a time to ensure it gets together. If it is too dry, dough will not come together. Also, you do not want dough to be too sticky, it needs to be dry tight dough.
  5. Once the dough is tight and done, wrap it up in a cling film, just flatten it out and keep in fridge for 30 minutes.
  6. Pre-heat the oven at 220 degrees Celsius.
  7. Roll the dough thin on flat surface. Rolled big enough to fit into Tart Mould that you have.
  8. To mould, press it against the mould from inside so that there is not gap in between.
  9. Take out extra dough from edges.
  10. Prick at the bottom with a fork to ensure that tart doesn't puff.
  11. Bake it at 220 degree Celsius for about 20 minutes. It may vary depending upon oven you are using. Do check in between.
  12. Once done, let it cool down, take out from the mould and Tarts are ready. They should be crisp.

So, while he was cooking Rogan Josh, I decided to do this class Black Forest Cake recipe.

 I like baking cakes and pudding and making all the desserts which we love after gorging on what Raj cooks. Though I have baked so many cakes and puddings and other stuff. I thought of sharing the wonderful home made cake recipe. It is basic but the joy of baking is what makes it special. You do everything on your own, right from the batter to icing and to layering. Just the passion makes it special.

I will just get on to the recipe here. Normally, you would use cherries in this but I did not have it. You can use cherries because that is the classic way.


Recipe

Sponge Cake:

  1. 2 cup all -purpose flour
  2. 1 teaspoon baking soda
  3. 6 tablespoon cocoa powder
  4. 1.5 cup sugar
  5. 1 cup oil
  6. 2 cup water (normal temp)
  7. 2 tablespoon lemon
  8. 1 teaspoon vanilla essence

It is one of the favorites to eat when you are strolling in market. They even say Kolkata rolls are the best, well I would not disagree because I have tasted them. But what if you want to make these egg rolls at home? Well, not the Kolkata style but easy basic egg roll. There are so many varieties of egg rolls. Find out here more about egg rolls.

This is what I am going to share with you. Nothing rocket science about it and the fillings that I will tell you about are the regular ones. You can try other things but then the regular fillings are the ones to beat.

Egg Roll is something that everyone loves with their ketchup and green chutney. But I don't like these sauces and chutneys. I feel they make the roll soggy. I like it crispy.

A roll should be crispy outside and till the last bite. That is what I feel.

Recipe

  1. Maida or Refined Flour
  2. 1 egg per roll.
  3. Shredded Cabbage
  4. Sliced onions.
  5. Shredded Capsicum
  6. Any other vegetables if you want.
  7. Salt
  8. Chaat Masala
  9. Green Chutney if you like it or any other chutney/sauce.

Healthy Deviled Eggs

It is every morning fare at our place, especially in winters. Me and my twin sons eat boiled eggs sans the yolk. They way they don't like the yolk reminds me of my childhood and how even I used to hate the yolk in boiled eggs. Well, it is a good thing as by not eating yolk we are avoiding FAT. But then all white becomes bland.

Deviled Eggs is something that came to my mind and I have seen to so many variations of Deviled Eggs. I actually did not want to create the same thing but wanted to see if I can do something new and make it healthy as well.

So here it is, Deviled Eggs with Hummus 3 Ways. I had made Hummus a day prior and had some leftover. So, That is how I got the idea of this. See, how leftovers can be easily used in a fantastic way.

Deviled Eggs can be traced back to ancient Rome. Traditionally, they are served cold. Hard boiled eggs are cut into half lengthwise. Yolk is removed and then crumbled and mixed with mayonnaise and mustard or other ingredients and then stuffed back.

But as the name I gave, my Deviled Eggs are healthy and a fusion of European and Lebanese fare. I stuffed them with Hummus in 3 different variations. Not only it makes the the eggs to colorful but also variety of flavor adds the interest and it is super healthy.

Lets see how the recipe goes.

Recipe
Ingredients:

  1. 4 hard boiled eggs.
  2. Hummus. Find the recipe here.
  3. Red Bell Pepper.
  4. Spinach

Now we are using Hummus which already has a lot of flavor so we will not be adding additional salt or any other spice. If you feel the Hummus that you have made has less salt, just sprinkle some salt on top or add more salt in Hummus as with the boiled eggs it might taste bland. Make it as per your taste.

Uttapam on Bread

Bhavna again this side. Well, I am sure you must be getting all the non-veg recipes from Raj but It is me who gets in kitchen to cook something new and different with veggies.

Today is a simple Uttapam Recipe but with a twist and presented in a wonderful way which will make your kids and guests eat this famous south Indian dish with much desire.

Look at this pic and see how a boring dish (as per my Raj) can be turned into a super rockstar (as per Raj again).

Raj was home little late and as usual said that he is hungry. So he wanted something to eat with tea. Now, there are times like these when I start thinking on making something nice for him. And then came the idea of making Uttapam on Bread.

Now, Lets get down to the recipe. Most of you know how to make Uttapam but still I would share the recipe for that too:

Ingredients:
  1. Suji
  2. Chopped Onions
  3. Chopped Capsicum
  4. Chopped Tomatoes
  5. Little Cream.
  6. Salt and Pepper
  7. Chopped Green chillies.
  8. Chopped Coriander (optional)
  9. Bread slices
  10. Some water

Desi Tortilla Wrap

Hi Friends,

One of the rare days when I wanted to cook something veggie and for my kids which is delicious and not spicy, I could think of fusion. While coming back from office thinking what could I make, the spark in my head told me to do a twist to spicy Tortilla Wrap recipe. You can even make this for kids' lunch box.

Tortilla Wraps basically come from Mexico and are known to be spicy as most Mexican food is. But this time what I will share with you is a nutritious and yummy recipe which not only tastes good but looks good and give something new to your kids. You will find that the recipe so much resembles Indian way of cooking.

The magic is in the stuffing which is suited to kids' taste buds but obviously you can modify to your liking, by this I mean spicy!

Here is the Desi Tortilla Wrap recipe:

Ingredients:
  1. Tortilla Wraps. You can get it from any grocery store.
  2. Rajma or Kidney Beans. Boiled nicely.
  3. Chopped Onions
  4. Roughly Chopped Tomatoes. We want them in the bite so don't chop them finely.
  5. Paneer cut in small cubes.
  6. Spinach - blanched.
  7. Salt and Pepper.
  8. Dried Mixed herbs
  9. Dhaniya power and Garam Masala.
  10. Mayonnaise

Baked Cheesy Rolls - Healthy Snacking

When it comes to kids, you know for sure that if you add cheese they will love it. My kid's love cheese and they even demand cheese crust pizza in their favorite outlet.

So, I was thinking of some new way to give them a snack which not only they loved, but even me and my wife could it. So I had to make it healthy. Well you say cheese and healthy? Well, not really but I baked these snacks instead of deep frying. Now that makes it healthier, doesn't it?

These are just like deep fried as they outer crust is super crispy. You will love these Baked Cheesy Rolls.

  2. Mozzarella cheese cut in bars as same length of the width of bread slice.

Egg In A Hole

Egg in a hole or Egg in a hole recipe

Managing 4 year old twins is such a difficult job but sort of blessing as even as a father I cannot escape their responsibility. Everything has to be shared and mother does not get to do everything alone. So, I picked up the part which I love so much and that is cooking.

So, as I was making eggs Sunny Side up for my kids, I thought why not make it different. Then I got the idea from the shape cutters my kids have in their clay shape maker collection. Eggs are actually power house of protein and very important for kids. Though we as adults avoid yolk due to health reasons, I advocate giving yolks to kids alongwith whites as it is full of energy which kids need. Also, if they have cold, hard boiled eggs with yolk really does wonder.

Though I did not use it, I just used a small bowl to make the cut that you can see in which out little shiny sun is chilling out!!!
