Amritsari Fish Fry Recipe

Amritsari Fish Fry Recipe

Craving for good North Indian Food  has made me try all those amazing staple dishes which are so common in northern part of the country. Amritsari Fish Fry is one of them and I have always wondered how do they make that marinated fish on the road side 'thelas' in Punjab, especially in Amritsar where it originated. It is a real staple in Amritsar or Punjab like you have chaat in Delhi or 99 Variety Dosa in Bangalore. Punjab has 5 rivers so all the fish is river water fish.

Ever since I have moved to Bangalore, I haven't found good food as per my palette and now I make those basic ones like Chicken Curry, Tandoori Chicken, Afghani Chicken, Chicken Malai Tikka and many more at home. They are healthy and taste even better as I make them with authentic ingredients rather than cheap alternatives.

Fish is another thing that I have started enjoying but purely in form of fried fish. Somehow I do not like Fish curry. But I love fried fish so much. One of the reasons I love fish it is that it is one of the easiest of non vegetarian foods. One that that I usually make is Tawa Fish Fry.

But this Amritsari Fish Fry is totally different thing. The taste and smell of Ajwain in the batter and sourness of lemon juice and Vinegar which has seeped inside the fish is a simple blast of flavours. Ajwain has another purpose apart from adding to the taste, it counters the gastric that is produced by combination of Fish and besan (Gram flour). But that's cooking, science and art both, isn't it?

Take a look at Amritsari Fish Fry that I make this weekend.

Let's see how can you make Amritsari Fish Fry, I am sure you know how to chill your beer.

Amritsari Fish Fry Recipe

By

Famous in Amritsar (Punjab) in India, this is simple yet full of flavours and a perfect snack.

Prep time:
Cook time:
Total time:
Yield: Serves 4

Ingredients:
Seer Fish cut in Fillets. Any fish will do which has single bone
1 tablespoon lemon juice
1 tablespoon vinegar
1 tablespoon Ginger Garlic Paste
Sale to Taste
1 tea spoon Red Chilli Powder
1 tea spoon Ajwain
2 tablespoons Besan or Gram Flour
2 tablespoons Curd
1 Egg

Method:

First Marinade:
  1. Take fish fillets in a bowl.
  2. Add salt, lemon juice, red chilli powder and ginger garlic paste and mix well.
  3. Leave it for 20 minutes to marinade,.
This will ensure that that spice and lemon seeps into the fish.

Second Marinade
  1. Now add besan, vinegar, ajwain, curd and egg.
  2. Mix well and leave for marination for 10 more minutes.
Egg will help in giving crispness to the fish. Now heat the oil and deep fry the fish till it is golden brown, a little darker shade of brown actually.

When deep frying I use the a simple method, fry on medium first so that it gets cooked from inside and then turn up the heat to give that crispness.

Amritsari Fish fry is ready, serve it with onions, green chutney. Don't forget to squeeze a lemon on onions and may be little chaat masala on the fish. Oh, must not forget the Beer that is chilling in the fridge.

Hope you loved the recipe.

Love,
Raj

Hey  People,

So, as it is happening, this is my second post of the day. Earlier, I posed this Mocha Mousse recipe by my wife. And, now here is what I made and relished this really, really, really simple Fish in Butter Lemon Sauce.

So, I came home little early, took him to the shop, got some fillets and made this easy dish ready in 10 minutes flat. Timing was apt as my wife also reached home and likes to have a light early dinner. She was super happy!

I remember my father making this very often but then in between I lost touch with the fish after he passed away. But then my wife rekindled my love with this fish fry and I am so happy about it.

Goan Red Fish Curry

Hi All,

I tried Goan Red fish Curry as an experiment this Sunday. I actually wanted to make prawns but my husband already made Butter Garlic Prawns a day before.

Anyway, I am Bhavna, Raj's wife and he insisted me I post few recipes on this blog as I am also fond of cooking. I generally like to cook desserts and cakes and puddings but my first post is going to be this wonderful and spicy fish curry from the sunny beaches of Goa. :-)

Butter Garlic Prawns

Butter Garlic Prawns is one of the simplest and fastest recipes I have made which has amazing flavor and natural wonderful aroma of Prawns when they are cooked.

One thing that I have always loved but seldom get to eat is Prawns. My mother-in-law stays in Orissa and cooks amazing Prawn curry. But if you know me well, I am not really curry person. So, today I bought prawns, as I am in Delhi, and thought, OK, let me try Butter Garlic Prawns.

I had the best prawns of my life in a restaurant in Puducherry (formerly Pondicherry). They were Golden Fried Prawns and I was totally bowled over by them. I never had those kinda prawns ever again.

So, with Butter Garlic Prawns or Shrimps, I did not even try to match it. Anyway, its a different recipe but It came out good, in fact too good. The wonderful warm taste of garlic and the natural taste and bite of prawns make it super delicious and the butter makes it so much glossy and juicy. It's a perfect sea food snack to be had with amazingly chilled beer in afternoon. Oh my, I am thinking of Goa here!

Let me take you through the recipe now:

Ingredients:

  1. 10-12 small Prawns: de-shelled and de-veined. This is very important. If you do not know how to do it, ask the person at the shop to do it. You can also buy packed prawns/shrimps which are already de-shelled and de-veined.
  2. Butter - 1 tablespoon.
  3. Finely chopped garlic.
  4. Salt and black pepper.
  5. Half a lemon juice.
  6. Coriander for garnishing.

Fish with Pesto Sauce

Fish with Pesto Sauce recipe

Hi,

My wife is Odiya and she loves her fish. She makes that wonderful fish in mustard seeds gravy though I am not a big fan of fish with gravy. I like my fish to be pan friend or simply fried. Just few days back I shared the classic Fish & Chips Recipe.

Fish with Pesto Sauce
Pan Fried Fish with Pesto Sauce

I have had some inclination to make continental and European food and made this wonderful Pan Fried Fish with Pesto Sauce. Thought of sharing it with you folks here on my blog, after all, love is when you share.

The star of the dish was the Pesto Sauce which made my hardcore Punjabi food loving mom say WOW! So, you can imagine how good it was! This sauce is full of strong flavor of different herbs and nuts, truly amazing and it is sharp.

Here it is, Pan Fried fish with Pesto Sauce recipe:

Pan Fried Fish with Pesto Sauce

Pan Fried Fish with Pesto Sauce recipe. Amazingly easy and even more amazingly delicious

Prep time:
Cook time:
Total time:
Yield: Serves 2

Ingredients:
Fish Fillets. Well, you can use any fish that you want which can be filleted and doesn't have those tiny bones. I used Singhara (Cat Fish).
Mixed Dried herbs.
Salt and Pepper.
2-3 tablespoons oil to pan fry the fillets.
Basil leaves.
Mint Leaves
4-5 Garlic cloves
Walnuts. You may use Cashew nut as well if you don't have walnut.
Olive oil.

Method:
  1. First, we will make the Pesto sauce and It is very simple.
  2. Mix Basil, Mint leaves, Garlic cloves, 1 table spoon of olive oil, Walnuts, little salt and pepper in a grinder.
  3. Grind it well but not to a fine paste. You should grind it only to the level where you can feel the grains of walnut. It should have a nutty bite.
  4. Your Pesto Sauce is ready. Keep it aside.
  5. Now, season the fillets with Salt, Pepper and Mixed herbs.
  6. Heat oil in the pan. Though make sure oil is not too hot. We will cook it on medium heat else on high heat fish will burn from outside and won't cook from inside.
  7. Sear the fillets and cook for 5 -7 minutes from both sides. Do check how well your fish is done. It should be white and fibery from inside once cooked. If it's pale or off white, its not cooked.
  8. Once done, using a spoon, smear the pesto Sauce on one side while the fish is in the pan. Let it cook for another 2 minutes for the fish to absorb some flavors of the sauce.
  9. Serve it hot.

Now, once you take a bite, I assure you, you will have a totally different warm taste of pesto. The garlic flavor really comes out along with aroma of basil. Serve it to your guests at home and they will go bonkers.

I hope you liked the recipe. If you wish to continue getting more recipes, do subscribe to my blog and also leave your comments below.

Fish and Chips
Beer Battered Fish and Chips

Somehow, I love most thing British! Though I have never been to England but from whatever I know of England, be it the culture, food, living habits, weather, accent, I think that is the only place I would like to settle outside India if I get the chance to.

Food is one of the main reasons I like it and I do follow few British chefs. Fish and Chips was one of the earlier english classics that I picked up which I got hooked onto. And today, I will share with you the recipe of this classic dish.

I actually added another side to it by adding yummy mushy peas which adds another bit of nutrition in the dish.

Recipe for Beer Battered Fish and Chips with Mushy Peas:

Ingredients:
  1. Fish Fillets. I sued Singhara or Cat Fish.
  2. Flour (Maida)
  3. Chilled beer. Well, this one is not to drink but to be added in batter. :P
  4. Salt and Pepper
  5. Oil to deep fry
  6. Packed French Fries.
  7. Green peas, boiled.
  8. Butter.
  9. Bread Crumbs. Here is how to Make Bread Crumbs at home.
  10. Egg for egg wash.
