Mint Coated Chicken

Recipe for Mint Coated Chicken

Mint is something which is so strong in flavor and aroma. I really enjoy the smell it has and love to combine it with chicken, apart from Spinach. Check the Chicken with Pesto Sauce and Spinach stuffed Chicken. The green color in both of them is awesome.

So, I decided to give a unique twist to the humble chicken breast. Not to just serve it with some sauce but to coat it with mint. Though once cooked it doesnt stay green as it browns but it still carried the mint flavor.

Look at the darkish green coat that the chicken has.

Along with the chicken, I made caramelized onions which tasted amazing and provided that crunch.
As usual chicken was juicy and tender and the mint on the outside really gave a it a different twist.

It has been such a long time that I got to cook something new. I have been very busy lately. travelling to Bangalore for work, then two consecutive weekends were busy in doing road trip to Dehradun and Lansdowne for some unwinding. The last dish I did was Fish in Lemon Butter Sauce. But now I am back! And with something amazingly continental or say perfectly simple, easy and yet delicious! 

I had been itching to try this for a long long time but wasn't getting time. And since it is not an Indian dish, It as hard to cook with my mom at home, so cooked it when it was only me, wife and kids at home. Off course, we had the chilled beer and white wine. Perfect Sunday afternoon lunch with family!

Here it is, Slow Braised Lamb with baked potatoes. I actually used mutton because it is very hard to find Lamb. It is the magic of slowly cooking the lamb which makes it all so amazing. The meat gets so tender, the herbs and spices, all the ingredients combine to end up with a mouthful of magic. Add that with the aromatic baked potatoes and you have a perfect lazy lunch.

With the way I have done so many dishes with Chicken Breast and I actually love doing it, I feel I should have been born in Europe or say, England where I could have it day in day out. I mean, this cut of Chicken is so awesome that you can use it in millions of way. Few you can find on my blog like 5 ways to cook Chicken Breast, I mean just have a look at this and you will see the versions are limitless.

So, I decided to do one more thing with something very different. Apart from the regular Salt and pepper, I have tried some mild Indian spices to make this simple Pan Grilled Chicken breast.

This dish can be eaten with any sides like mashed potatoes (check recipe here), crispy veggies or may be Buttered Rice. Makes for a really delicious meal if you have it with chilled beer or may be a glass of your favorite wine. Now that does sound very European, isn't it?

Well, lets get to the recipe.

Recipe

Ingredients:
  1. Whole Chicken Breast
  2. 2-3 Garlic Cloves
  3. 3-4 Green Cardamoms.
  4. 4 table spoons Olive Oil
  5. Half tea spoon of nutmeg powder
  6. 1 tablespoon Lemon Juice and zest.
  7. Coriander powder
  8. Chopped Coriander.
  9. Salt to Taste.

I have always found Chicken breast to be one of the easiest cuts to work with. It is so dynamic and versatile in nature that you can do wonders. All you need is your imagination and you can win hearts with the results using your improvisation and innovation. It cooks fast, easy to manage while eating, it's everyone's favorite.

My wife actually loves continental and I love non-veg. So, whenever I want to cook for my wife, first thing comes to my mind is how can I do something new with chicken breast.

But today, I will make it easier for you by sharing my best 5 recipes which I have done using chicken breast. You will see how different they are but basics are almost same. Some are stuffed, some are pan fried, some are baked in oven.

Chicken breast is a really versatile cut of chicken. Not only it cooks fast, you can do so much with it that the options are unlimited. All you need is something with it to elevate it. Chicken is anyway rich in protein and also less in fat since it is white meat.

I had picked up 3 chicken breasts to make Bacon Wrapped Chicken Breast. But i could use only two and had one extra. Also, my wife said she wanted to eat something continental and my mind worked up quickly to fulfill her command. So, I came up with succulent Chicken Breast with white creamy and delicious mushroom sauce which is the actual hero. You can try this another Creamy Sauce as well which is another similar sauce but with more ingredients.

I love this kind of food because it is not so complex and does not take much time to cook. You will also see how easy it is.

Recipe
Ingredients:
  1. Chicken Breast whole.
  2. Salt and Pepper.
  3. Cream 100 gms.
  4. Half cup milk which is about 50 ml.
  5. White wine 25 ml.
  6. Mushroom. I used 2 medium sized buttons and chopped them fine but not too fine.
  7. Dried Mixed herbs.

I have experimented a lot with chicken breast with all different variations of stuffings like Peanut Crusted Chicken SteakCheese Chicken Cordon BleuKeema Stuffed Chicken Breast, Chicken Stuffed with Spinach. I have been thinking to actually wrap it up in something like bacon. Where I live, bacon is not available in normal meat shops. But I was in this new hi-fi meat shop and they had english bacon which I picked up.

When I got home, I also thought of stuffing the chicken breast with something to make it even more flavorful. And, when I looked into the fridge, I had this delicious Chicken Rahra from previous day. Chicken Rahra has thick keema gravy which I thought of using. Now, I will tell you how you can use normal keema stuffing for this. You can actually use stuffing of your choice. You can even add pistachio or cashew nuts or even raisins. Let your imagination fly.

This actually came out really wonderful as chicken was juicy and moist and bacon was crisp. Also, the stuffing inside was adding that zing and mushroom sauce added that creamy flavour and texture.

Ingredients:
  1. Two medium size chicken breasts.
  2. Chicken keema or mince
  3. 6-7 bacon strips.
  4. Salt and Pepper.
  5. 2-3 table spoons Oil.
  6. Chopped green chillies as per taste.
  7. Dried Mixed herbs

Somehow, I love most thing British! Though I have never been to England but from whatever I know of England, be it the culture, food, living habits, weather, accent, I think that is the only place I would like to settle outside India if I get the chance to.

Food is one of the main reasons I like it and I do follow few British chefs. Fish and Chips was one of the earlier english classics that I picked up which I got hooked onto. And today, I will share with you the recipe of this classic dish.

I actually added another side to it by adding yummy mushy peas which adds another bit of nutrition in the dish.

Recipe for Beer Battered Fish and Chips with Mushy Peas:

Ingredients:
  1. Fish Fillets. I sued Singhara or Cat Fish.
  2. Flour (Maida)
  3. Chilled beer. Well, this one is not to drink but to be added in batter. :P
  4. Salt and Pepper
  5. Oil to deep fry
  6. Packed French Fries.
  7. Green peas, boiled.
  8. Butter.

  10. Egg for egg wash.

After this I knew that this kind of cuisine is so simple and easy to make. So, its a very simple dish and as European dishes are, its non spicy, something that most people would love. Its simple sauteed chicken breasts with a sweet Honey and Vinegar Sauce.

Ingredients:
For the Chicken Steak:

  1. 2 whole chicken breasts.
  2. Salt and Pepper
  3. Dried Rosemary
  4. Dried Mixed Herbs
  5. 2 table spoons oil to cook in flat pan.

For the Sauce:
  1. 4 table spoons vinegar
  2. 2 table spoons honey
  3. Salt and Pepper
  4. Half lemon juice
