Frittata Recipe or How to make Frittata

Weekend and time for that innovative and amazing breakfast, isn't it? Well that is exactly what I had today on this Lazy Sunday Morning. Two things I did, made this amazing breakfast and dusting of the house. Well, that is my way of helping my wife at home on weekends. Trust me, I do both things with passion as I like my food good and my house without a spec of dust.

Anyway, enough bragging and lets get to drooling. I have always though of baking eggs a fantastic way to have eggs. Egg Frittata was one thing that I wanted to make as I love eggs. Give me eggs anytime, in any form, I will be happy! It is also a more nutritious form as you can add as many veggies that you want. I had only peas and onions in the house and made do with them but you can add anything that you want. Carrots, capsicum, mushroom, anything you love! Well, if I had planned it well, I could have added salami and sausages too! Hell yeah! Though Frittata in Italian translates to "fried" but I baked them totally except the veggies that I sauteed beforehand.

To be honest, this was not the first time I have tried this. First time I tried, it was a fail but then I ensured I did not repeat those mistakes and look at the result, it came out just the way I thought it would, in fact even better! I really did not want to make it healthy, I wanted it rich and flavorful and that is what it was!

Egg Frittata

Egg Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. The word frittata is Italian and roughly translates to "fried".

Yield: Serves 2

Ingredients:
4 eggs, beaten
Half Onion chopped
Handful of green peas and any other veggies you want to add.
1 tablespoon butter
Chopped coriander
Mozzarella cheese
Salt and pepper.
Dried Rosemary and Parsely
1 teaspoon oil

Method:
  1. Keep a round baking dish in the oven and preheat the oven.
  2. Take a pan, heat it up.
  3. Add oil and butter once the pan is hot and let the butter melt. Adding oil ensures butter will not get burnt.
  4. Add veggies and onions and saute.
  5. Add the seasoning and rosemary and parsley.
  6. Transfer the sauteed veggies in the baking dish.
  7. Add the beaten eggs, coriander and mix well.
  8. Now add small chunks of cheese equally distributed in the dish.
  9. Bake at 200 degrees Celsius for 20 minutes.
  10. Take it out, put a plate on top of the dish and turn it over holding both of them together with both hands.
  11. Shake it to release the Frittata from baking dish. Also, you can slice the knife through edges once you take out the baking dish from oven for easy demoulding.
  12. Serve with crispy toast and a nice cup of coffee or tea.

Now that will be one filling and amazing breakfast that you will relish. The butter gives it the glaze, the cheese will be melting out when you will cut it. True Blue Italian.
