Stuffed Chicken Breast with Spinach and Raisins

I love to play around with different variations of stuffed chicken breast. You can pan fry it, roast it, grill it, options are unlimited.

What I am going to share is the recipe which gave not just different but such a contrast of flavors that I was amazed. The plate was finished in a matter of seconds like the flash sales these days. After that I have made it quite a few times as it is healthy and my wife loves healthy!

Stuffed Chicken with Cheese, Spinach and Raisins

Here is the recipe for Stuffed Chicken Breast with Cheese, Spinach and Raisins:

  1. Whole chicken breast
  2. Spinach
  3. Grated cheese of any kind as per your taste.
  4. Raisins soaked in water for few minutes
  5. Salt and Pepper.
  6. Chilli Flakes, Dried Thyme

  1. First of all we need to make a hole in chicken breast for the stuffing. For this, use a sharp knife and start piercing chicken breast from one end. Now you need to dig the knife deep till you make a big pocket in the chicken. This is where the stuffing will go.
  2. For the stuffing, blanch the spinach.
  3. Then heat little oil in the pan and add some finely chopped garlic.
  4. Add the spinach and cook it for 3-4 minutes. Now, when you cook, obviously it will reduce in size so do make sure you take enough spinach while picking it.
  5. Add, salt and pepper and mix well. Take it off the heat.
  6. Now add grated cheese and raisins and make a nice mix. This will be the stuffing.
  7. Now stuff this mix in the chicken nice and proper and ensure it is tight. Use the back of the spoon to fit it in.
  8. Now, season the chicken with salt, pepper, chilli flakes and thyme. Ensure its nicely coated.
  9. Heat oil in the pan and sear the chicken from all sides till it gets a nice color.
  10. Now cook it in pre-heated oven for 15-20 minutes at 180 degrees C.
  11. Take it out and do check if it's done. If not, cook for a little more.
  12. Once done, let it rest for 5 minutes. This is a very important step.
  13. Serve it with mayonnaise or your favorite sauce. Or, click here for this sauce which is a very versatile sauce.

When I made it for the first time, the contrasting flavors of chilli flakes, spinach and raisins came together and I was totally zapped. The chilli and sweet flavor was amazing.
