Cheese Chicken Cordon Bleu

Hey Folks,

By now you must have seen my love for chicken and the variations that I have tried of chicken breast. Yesterday, I shared a recipe for Baked Cheese Rolls  which were filled with lovely, delicious Mozzarella cheese. Today I present a different Cordon Bleu recipe.

Me being a hardcore non-vegetarian, could not resist and try something like this with chicken. So, last night I brought some chicken breast and got going. And the result was so over whelming that I still have that taste in my mouth.

But it wasn't as easy as cheese rolls as this one required some effort and technique.

Here is the Cheese Chicken Cordon Bleu recipe:


  1. Two Chicken Breasts. This will easily serve 2-3 people.
  2. Mozzarella Cheese grated.
  3. Bread Crumbs.
  4. Salt and pepper.
  5. Mixed herbs dried.
  6. Dried Rosemary.
  7. Grated Parmesan Cheese.

  1. If you see chicken breast, it is thick from one side and thin from the other. This prevents even cooking so first we need to make it even. Place the chicken breast on chopping board, cover it with a cling film and start pounding your chicken with a mallet or rolling pin. You have to pound it easy, not really beat it.
  2. Once it flattens down, remove the cling film and season it with salt and pepper. Don't add too much as we will season it from outside as well and also add some Parmesan cheese in the end and it is salty.
  3. Now spread the grated Mozzarella cheese like you do on a pizza.
  4. Roll it nice and tight. Now you will be wondering how to seal it. Well, we are gonna seal it using this "Toffee" technique. 
  5. Roll the chicken roll in a cling film tight. Ensure width of cling film is more than width of the roll.
  6. Now, tighten the roll by twisting the cling film from both sides in opposite direction, just like a toffee is wrapped. It needs to be tight.
  7. Once it is tight, tie it with a thread and keep it in fridge for 30 minutes. This will set the roll in this candy shape and actually seal it.
  8. Now, heat 1-2 table spoons in the pan.
  9. Season the chicken with salt, pepper, mixed herbs and rosemary.
  10. Sear the chicken in the pan from all sides. Cook on medium for 5 minutes from each side. This will somewhat cook the chicken and also give it some color.
  11. Now take out, and coat nicely with bread crumbs.
  12. Bake it in pre-heated oven at 180 degrees C for 25 minutes turning it over half way down.
  13. Take it out and let it rest for 5 minutes.
  14. Slice it and plate and serve after garnishing it with grated Parmesan cheese.
